Cold weather means SOUP TIME!!!!

Roasted Red Pepper Soup
1 medium onions diced
1 whole clove of garlic
2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
2-12 oz. jars of roasted red peppers
1 cup chicken stock
1/2 cup ketchup
1 tablespoons balsamic vinegar
2 tablespoons Worcestershire sauce
1/8 teaspoon cayenne pepper
On medium heat sauté the diced onion and garlic in olive oil with salt and pepper. Sauté til onion and garlic are soft not brown. Transfer into a blender with remaining ingredients. Blend til smooth. Add more chicken stock if you desire. Heat and serve.
**With any soup this is best the next day.
***If you dare to be a “Fancy Pants” crumble goat cheese on top!!!
