Escargot Rice Dumplings Fit into the Menu at Chef Nico Romo’s Newest Charleston Restaurant

A look at the menu at Bistronomy

Longtime Charleston chef Nico Romo is set to open his second restaurant Bistronomy in downtown Charleston this Friday, November 20. While Romo’s Mount Pleasant restaurant Nico focuses on wood-fire cooking and seafood, Bistronomy will concentrate on French classic cuisine with slight nods to Asian cuisine. For those who remember Romo’s menu at Fish Restaurant, which shuttered in 2017, he is employing similar flavor profiles, but more sophisticated this time around.

Romo, a native of Lyon, France, says that he wanted to bring back the cuisine that put him on the map in Charleston way back in 2007. The menu is full of classics like cassoulet, bouillabaisse, pate en croute, and pommes frites. There are Asian flavors too, like an escargot rice dumpling with candied ginger and brown butter or the scallops with coconut rice and ginger broccolini.
